Badia a Coltibuono is extracted naturally and first cold pressed free of any type of heat or chemical treatment. Rich in anti-oxidants, it is highly resistant to rancidity and particularly long-lived. The color of the oil is golden yellow with strong green nuances. It tastes of typical fruitiness and ardent flavor. The mild peppery sensation experienced at the back of the palate is characteristic of oil of low acidity from freshly picked early-harvested olives. Its best used for finishing cooked dishes, drizzled on soups, in pasta, risotto, on raw vegetables and on bread.
