Acetum specializes in the manufacturing of top quality balsamic vinegars. Established in 1906, Acetum is based in Cavezzo, in the historical building of the Motta Cellars. The cellars were totally restructured to host the vinegar production. The ageing areas, fully rebuilt with barrels and casks of different sizes and types of wood are at the top of capacity in the industry with total volume in ageing close to two million liters. I Legni balsamic is a special reserve balsamic matured in chestnut barrels, which imparts a distinctive bouquet. A unique flavor all its own.
