Speck is a dry-cured, lightly smoked Prosciutto from Italy's Alto Adige region with a garnet color, smoky aroma and mountain flavor. Speck is made from a pig's rear thigh, which is de-boned, and smothered in a dry-cure of salt and various spices (including pepper, garlic, juniper, pimento, and sugar). After two weeks of curing, the meat is then gently smoked over wood for two to three weeks. Finally, the meat is air-dried for 20-24 weeks, which further develops the meat's smoky flavor.
