This air-dried, salted filet of beef is aged for 2-3 months until it becomes firm and turns a dark shade of red, almost purple in color. A little Bresaola goes a long way. Served as an appetizer, Bresaola should be served sliced paper thin, drizzled with extra virgin olive oil, black pepper, lemon juice and crumbled Parmigiano Reggiano.
