Acetum specializes in the manufacturing of top quality balsamic vinegars. Established in 1906, Acetum is based in Cavezzo, in the historical building of the Motta Cellars. The cellars were totally restructured to host the vinegar production. The ageing areas, fully rebuilt with barrels and casks of different sizes and types of wood are at the top of capacity in the industry with total volume in ageing close to two million liters. Traditional balsamic vinegar is the crown jewel of all balsamics. It is obtained from cooked grapes, matured for slow acetification by natural fermentation, with progressive hundred-year aging in a battery of casks of different types of high quality wood. The flavor is an inimitable bittersweet, full, and savory with velvety undertones. This is a MUST try for the ultimate gourmet.
